How To Stage It

- Consider setting up chocolate tasting stations: feature one dessert or kind of chocolate, and appropriate “matching” beverages and nibbles at each station.

How Much Chocolate Will You Need?
If you are serving several chocolate desserts as well as several varieties of chocolate bars or squares at your “choctail party,” plan on serving smaller amounts of each instead of full-size bars or servings. If you use Ghirardelli Squares, plan on serving one square of each type of chocolate to each guest, and keep a dozen or so extras on hand. If you are featuring chocolate bars broken into smaller, one-inch, bite-size shards, plan on providing about 2-3 pieces of each type of chocolate per guest.
When planning how many of several different kinds of chocolate desserts you’ll need, think in terms of serving one-quarter to one-third of a normal serving per guest. Provide plates large enough for tasting smaller servings of two or three chocolate desserts.
A fun touch is to create take-home party favors featuring a variety of chocolate samples for guests, or to provide guests with take-home party plates, which they can assemble as they leave.
